Gahwa
Gahwa or coffee is a staple of every majlis or gathering and commemorates customs and conversations. However, Arabic coffee or gahwa is much more than a cup of spicy coffee, the main distinction being the preparation. Add two to three spoons of gahwa to a litre of water, wait for it to boil, turn off the heat as soon as it does, and leave it to simmer for two minutes. When the ingredients sink to the bottom, add a spoonful of cardamom, a spoonful of rose water and a pinch of saffron, then add all the gahwa to it and close the flask.

Karkadeh
Popular in Egypt and Sudan, this hibiscus iced tea is a treat for the eyes and the taste buds. Made with just five ingredients, karkadeh takes almost two hours to perfect, although the pleasant blend of rose and cinnamon is worth the wait.
Ayran
Ayran is served on special occasions in the Middle East, especially in Turkey. While the drink is very close to buttermilk, the key ingredient in Ayran is yoghurt. While this refreshing cold beverage is perfect for hot days, some also drink it because of its nutritional properties.
